Sometimes you need a simple salad.  One that goes with dinner, but doesn’t feel like the same old salad.  Sometimes one that looks impressive, but doesn’t take time.  Sometimes you need a salad that just does the job.  This is a nice and easy way to make a salad that tastes nice and a bit special, but doesn’t require too much extra effort.  The dressing is also a great staple of mine, and works really well with apples.  I hope you like it, you try it, and you share it!

Apple and Almond Green Salad (Serves 4-6 as a side, 2-3 as a meal)

  • 3 cups mixed leaves, as you prefer.  This was roughly 1/2 spinach, some arugula and then other mixed leaves left over
  • 1/2 cup almonds
  • 1 large red delicious apple
  • 1/2 red onion

  Salad dressing

  • 2 tbsp balsamic vinegar
  • 1/2 tbsp apple cider vinegar
  • 1 tsp dijon mustard
  • 3 tbsp olive oil
  • 1/2 tsp honey
  • pinch of pepper
  • pinch of salt

Combine all the dressing ingredients and set aside.

Wash and mix up your leaves

Roughly chop almonds and add to leaves

Dice apple into bite-size pieces and add to leaves

Thinly slice red onion and ass to leaves

Add dressing and mix all together with salad forks
