Chilli Lemon Sole with Brown Shrimp

The Sole, marinating in lemon, salt and chilli

One of my favourite fish is Lemon Sole.  And when you are eating clean it is an amazing fish because it is so buttery all on its own.  You don’t need to do much to it to make it special.  That being said, this Sole gets an extra flavour kick from marinading it in lemon juice, salt and chopped chillies.

The brown shrimp add another hint of rich flavour and they are the best accompaniment to sole no matter what else you put with it.

Chilli Lemon Sole with Brown Shrimp

  • 2 filets of lemon sole
  • 100g brown shrimp
  • 1/2 red chilli pepper, diced
  • 2 tsp salt
  • juice of 1/2 a lemon
  • 1 chopped green onion
  • 1 tbsp olive oil, plus 2 tsp for drizzling later

Put the Sole on a plate and cover with salt, lemon juice and diced chilli pepper

Let marinade for at least 3 hours, no more than 10

Heat oil In a frying pan on medium heat

Place sole skin-side down and cook for 5 minutes.

Remove sole from pan and add brown shrimp.

Cook shrimp for a minute, add a bit extra oil if needed

Top sole with brown shrimp and green onion.

Drizzle with oil.
