So, you already know that I had the gift of many lemons bestowed upon me by my uncle and his amazing lemon tree – and I have managed to use all of them, but the favourite of the lemon treats I made was these Lemon Squares.  They are a very traditional recipe, and not very intimidating at all to make.  You don’t have to get the proportions exactly right on the base for it to come out beautiful, and I think anyone can give them a try and come out with beautiful and delicious Lemon Squares.

Traditional Lemon Squares

For the base

  • 1 cup softened butter
  • 2 cups plain flour
  • 1/2 cup granulated sugar

For the Lemon Goodness

  • 4 medium eggs
  • 1.5 cups sugar
  • 1/4 cup plain flour
  • juice of 2 lemons

To Decorate

  • 1/4 cup powdered sugar

Preheat the oven to 350F (175C)

Grease and flour a square baking tin

First, mix together the ingredients for the base with your hands until you get a crumbly dough-like mixture

Push into the greased baking tin until you have an even bottom layer

Bake for 15 minutes until just beginning to brown

In the meantime, mix together the eggs, 1.5 cups sugar, 1/4 cup flour and 2 lemons until it is a thick, smooth paste.

Once the base is browning, top with the lemon mixture and cook for another 20 minutes

Take out of the oven and let cool before topping with a dusting of powdered sugar.
