I love dip. It’s delicious and easy to eat and often feels like less effort than a meal when in reality it is probably more.
My husband showed me Buzzfeed’s ultimate pizza dip on YouTube and I had to try it. I resolved to eat it with carrots and apple because I felt bad about eating something so wildly unhealthy. Here’s what I learned:
1. Don’t put the regular oven on, put it to broil or grill! The video says to put it in an oven at 450f until bubbly. Check. It took like five minutes. But! As you can see at the edges of my dip, it basically cooked the cheese. The middle was still dip-like, but most of it was like soft, crumbly-looking cream cheese. If you put it under the broiler or grill, the top will bubble without over-cooking the already-cooked cheese base.
2. More sauce is needed. The video just happily covers the cheese with sauce and smooths over in a thin layer. I would say that’s not enough. Make it a 2:1 or higher ratio of cheese to sauce. Otherwise you run out and that is half the you mines.
So here is my improved pizza dip recipe (no offence Buzzfeed) and I hope you find this an improvement!
Improved Buzzfeed Pizza Dip (original recipe via above link)
- 1/2 cup milk (I used 1%)
- 6 oz cream cheese
- 1/2 cup Parmesan
- 1/2 cup Mozarella, plus one handful for topping
- 1/2 cup pizza sauce (or more, to taste)
- 6-10 pepperoni
Grate your cheeses, the smaller the grate the better.
In a saucepan on medium heat place milk until warm.
Add cream cheese and stir with a whisk until incorporated. You can turn hob to a lower temperature if you are concerned about scalding.
Add 1/2 cup Parmesan and stir until incorporated.
Add 1/2 cup Mozarella and stir until smooth.
Take off the heat and pour into shallow oven-proof dish.
Top with pizza sauce, handful of Mozarella and pepperoni.
Turn oven to broil or grill on a medium setting.
Cook until it bubbles.
