Going through my mother’s recipe boxes and papers she has no less than five recipes for salsa. So why did I pick this one?  Because it is a good party salsa – it has a bit of spice to it, but it is very mild, so everyone can enjoy it.  It is easy to make a lot of, and you don’t need anything but a knife and ingredients to make it.  Simple, easy and crowd-pleasing I chose this out of all the others because my mum was someone who made people feel at home, and liked to make cooking easy for her kids to help out. This seems very much like her, even though she probably ate more of the habanero salsa…

My Mother’s Chunky Salsa

  • 8oz tin of corn (or 1 cup fresh)
  • 6 medium plum tomatoes
  • 16 cherry tomatoes
  • 1 red pepper
  • 1 small red onion
  • 1/2 cup fresh cilantro (coriander)
  • 1/2 a jalapeño, de-seeded
  • 1/3 cup lime juice
  • 1 tbsp olive oil
  • 3 cloves garlic
  • 2 tsp cumin
  • 1 tsp salt
  • 1 tsp black pepper

Dice the onion, red pepper, and both types of tomato

Chop the cilantro and jalapeño (make sure seeds are removed).

Combine all ingredients and stir to make sure the lime juice and oil fully coat.

Let marinade for at least 30 minutes in the fridge.
