Someday you just want something light and easy for dinner. Both of these salads are great in the summer, and they mix well together. One is the Avocado Tricolore which is a simple, classic, cold salad. the second is Zucchini and Prosciutto in a sweet and sour dressing. The dressing alone is amazing, I use it on so many other salads, and it is great with mackerel. This salad can be served warm or cold, so whatever you are in the mood for.

Zucchini and Prosciutto Salad
- 1 small zucchini
- 200g prosciutto
- 1 tbsp honey
- 1 tbsp red wine vinegar
- 2 tbsp olive oil
- 1 tsp black pepper
- 1 tsp salt
For the dressing mix everything together, or put into a bottle and shake to mix. The honey sticks to shake it well.
Heat a grill or the broiler and pop the zucchini in for 3-4 minutes each side
Arrange over prosciutto and drizzle over the dressing.
- 1 avocado
- 2 plum tomatoes
- handful of fresh basil
- 100g fresh mozzarella
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
Chop the tomato and avocado into slices or chunks as you prefer
Tear mozzarella and basil and add to tomato and avocado
Mix all together and drizzle with olive oil and then balsamic vinegar
