I love miso. You will probably see a lot of miso in my clean eating month because it is completely natural, and packs so much taste in just a little amount. I was devastated to discover that soy sauce is not part of clean eating because it is processed. Good news is that miso, in some contexts, keeps the saltiness and umami flavours you will miss not having soy sauce.
I am pleased to say this recipe is really good, and this clean eating change is actually starting very smoothly. I hope you try it, even if you aren’t eating clean, because it is just really nice.
Ginger Chicken Soup
- 1-inch chunk of ginger
- 3 cloves of garlic
- 1tbsp olive oil
- 400g chicken breast or thigh, diced
- 2tsp brown raw miso
- 1tsbp mirin
- 4 cups chicken broth (bone broth ideal)
- 1/2 cup green onion, chopped
- 200g spinach
In a large saucepan heat oil on medium heat
Sear chicken so it is cooked on all sides
Add miso, garlic and ginger, and stir so it coats chiken.
Cook for 2 more minutes, it will become really fragrant
Add broth and mirin, bring to a boil
Reduce heat to a simmer and cook a further 20 minutes
Two minutes before serving, add spinach and green onion.
It is really flavourful and hearty enough to be dinner, but you could also make it as a side. Enjoy!
