My mom used to love margaritas. The summer before I left for university my mom bought a bottle of margarita mix and showed me how to make an easy virgin margarita. It is still my favourite cocktail. As such, there are usually limes and tequila in my house somewhere.
Tequila lime chicken is very flavourful, and baking the chicken in the sauce ensures that the chicken thighs are really delicious. I hope you give it a try, and don’t worry the alcohol cooks off, so you won’t get drunk off of dinner 😉
Tequila Lime Chicken
- 1 1/2 tsp cumin
- 1 tsp chili powder
- 1 tsp cayenne pepper
- 2/4 tsp salt
- 6 boneless, skinless chicken thighs
- 1/3 cup tequila
- 1/4 cup honey
- 3/4 cup apple juice
- 2 tsp water
- 2 tsp cornstarch
- 3 tbsp lime juice
- 1 red pepper, sliced
Preheat an oven to 400F (200C)
Grind cumin and combine with chilli powder, cayenne, and salt
Rub on both sides of the chicken thigh.
In a saucepan combine honey, tequila and apple juice and bring to a boil
Reduce by half
In a separate cup combine cornstarch and water until smooth
Add to the saucepan of tequila, honey and apple juice, stirring to combine
Simmer for another minute as it thickens
Add lime juice
Line a baking pan with foil
Fill the pan with chicken thighs and red peppers, and cover with the sauce.
Bake for 20 minutes
If you prefer blackened peppers, place them under a grill for the final five minutes.
