Who doesn’t like tomato soup. It is warm and simple, goes amazing with grilled cheese, and even kids like tomato soup. While having canned soup is tempting, it is always so much more delicious to make it yourself. This recipe is, for tomato soup, pretty low maintenance, really flavourful, and completely delicious.
Home Made Tomato Soup, Serves 2
- 500g ripe tomatoes
- 1 onion
- 3 cloves garlic
- 2 1/2 cups of stock
- 2 tbsp red wine vinegar
- 2 tbsp tomato ketchup
- 2 tsp oregano
- 1 tbsp oil
Dice the tomatoes and chop onions and garlic
In a medium-large saucepan soften the onions and garlic in the oil on medium heat
Once the onions are soft (2-3 minutes) add the rest of the ingredients, and stir while bringing to a simmer
Keep soup at a simmer for 35 minutes.
With a hand-blender or standing blender, blend the soup until smooth
