Chorizo and Cheddar Baked Sweet Potato

Cheddar-Chorizo-Baked-Potato

Baked sweet potatoes are a great healthy substitute for the normal baked potato.  Chorizo instead of bacon gives it a real meaty kick and as much cheese as possible, please!  I am making these cheese and chorizo baked sweet potatoes in for the Superbowl party, but thinking about them made me want one for lunch desperately!

Chorizo and Cheddar Baked Sweet Potato

  • 1/2 cup of grated cheddar cheese
  • 50 g of chorizo
  • 1 whole sweet potato
  • a dollop of sour cream, if you like

Preheat the oven to 400F (200 C)

Poke the sweet potato with a fork in several places

Place it on a banking tray in the preheated oven, and bake for 40 minutes

In the meantime, grate the cheddar cheese and dice the chorizo

sauce the chorizo in he frying pan for 5 minutes until brown on both sides

One the sweet potato is cooked, slice open the centre and Scoop out  half of the middle

Mix it with most of the chorizo and cheese and put back into the sweet potato shell

Top with the rest of the chorizo and cheese

Add a bit of sour cream if you like!
