Easy Arugula Salad

It took me nearly two years to realise that Arugula in England is “Rocket”.  Once I did figure it out I stopped steering away from it and found myself happily enjoying arugula in sandwiches and salads again.

One of the easiest things to make as a side for dinner is a basic Arugula salad.  It goes well with most dishes (the peppery-ness makes it great with meat or pasta) and takes maybe 5 minutes to make, if you are distracted by your husband with a new youtube video.

As a bonus the salad and dressing is so lovely that you can add anything you want to make it a lunch.  I certainly recommend adding any leftover chicken (like my sage and prosciutto chicken)  to make it a healthy work lunch.

Basic though it is, the salad dressing is a great staple and goes particularly well with peppery arugula, but also on spinach salads!

Easy Arugula Salad

Give this nice and easy recipe a try, you will have put it together in no time and can focus on the main dish.

Easy Arugula Salad (Serves 4)

  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 1 shallot, diced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 bunch of green beans
  • 6 cups Arugula (Rocket)

Steam or boil green beans for 3 minutes until tender but crisp.

In the meantime, in a bowl whisk together first 7 ingredients.  That is your dressing.

You can put this in the fridge for later, but give it a whisk before serving

Trim the ends of green beans and cut in half

Toss dressing and green beans with arugula

*Optional: add some leftover chicken, a boiled egg*
