I love fruit salad, but it always feels like a summer dish. However, I realised that a great winter fruit is pomegranate, and one of my favourite drinks is a pomegranate mojito. So I present to you the (winter) Mojito Fruit Salad!
If you aren’t a fan of any of the fruits, it is ok to substitute because the true secret to this fruit salad is the mojito syrup. I do recommend this combination of fruit, though, because they go well with the mojito mix of lime, mint and sugar.
Mojito Fruit Salad (Serves 4)
- 1/4 cup Water
- Juice 1 Lime
- 1/4 cup Sugar
- 1tsp Salt
- Zest of 1 lime
- Seeds from 1 Pomegranate
- 2 Nectarines
- 60g of Blueberries
- 1/2 a Bunch of Grapes
In a small saucepan combine first 4 ingredients on a low heat, stirring regularly
When sugar has disolved, add lime zest and chopped mint
With a wooden spoon crush the mint against the side of the saucepan and cook for a further five minutes, not letting it boil.
Turn off the hob and transfer to the refrigerator until cooled
Wash all of the fruit
Cut the grapes lengthwise, chop nectarines into cubes
Mix together fruit with the cooled syrup.
