Spice-Rubbed Duck Leg

Every now and then I get the urge to make something really special, but I also tend to be a bit lazier at the weekend.  Duck is a great simple but special dish, because you can cook it in the oven on low and make a really tender, but you just shove it in the oven. I went with a cayenne-based spice rub tonight, because it gives a little extra kick, and  I served it with Zucchini Fries and Cauliflower Mash to keep the richness of duck balanced and healthy:

Spice-Rubbed Duck, Serves Two, Takes 65 minutes

  • Two Duck Legs
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp salt
  • 2 tbsp honey

Mix the cayenne, paprika and salt together and rub the duck legs with it.

Heat the oven to 150 C (300 F)

Once the oven is heated (the duck can marinade during this time) place the duck in the middle shelf

Cook for 40 minutes, then remove and cover each leg with a tbsp of honey

Cook for a further 10 minutes.

Enjoy with something a bit creamy to balance the spice!

Recommended Side: Cauliflower Mash

  • One head of cauliflower
  • enough water to cover cauliflower
  • pinch of salt
  • 1 head of garlic
  • 25 g butter (optional)

Break up the cauliflower into a saucepan and cover with water

Bring to a boil and let simmer for 30 minutes

In the meantime chop some garlic

Drain and place cauliflower in a blender with the garlic

Blend until smooth

Add salt and butter to taste
