Eggnog Cookies

You already know I am an eggnog addict, and I have tried and tried to make some nice eggnog cookies. I tend to find recipes that are too bland or too cake-like. This has a good balance – but I will be honest, I think it is the frosting that makes it something special. WThe cookies are not as sweet to balance out the frosting and both taste of spiced eggnog.
I hope you like it. I have it with some chai tea!

Eggnog Cookie Base

  • 2  cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp ground nutmeg, (more for decorating)
  • 1/2 tsp ground cinnamon
  • 3/4 cup salted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light-brown sugar
  • 2 large egg yolks
  • 1 tsp vanilla extract
  • 1/2 cup eggnog

Preheat oven to 180 C (350 F).

In a mixing bowl, whisk together flour, baking powder, salt, nutmeg and cinnamon until all mixed.

In a separate bowl, whip together butter, granulated sugar and brown sugar until fluffy, it should look a bit like frosting.

Add the egg yolks one at a time, mixing just until it is all combined.

Add vanilla extract and egg nog, mix until blended

Add the bowl of dry ingredients, a little at a time.  If you hand mix, don’t use a whisk, use a fork. If you have a mixer, but the setting on low.

Scoop an over-full teaspoon of each onto parchment-lined baking sheets

Bake for 13 minutes, they will have flattened out and be slightly brown on the edges, but should overall keep its colour.

Cool on a wire rack until room temperature, or cool enough that it won’t melt the frosting.

Eggnog Frosting

  • 1/2 cup salted butter, softened
  • 5 tbsp eggnog
  • 2 1/2 cups icing sugar (powdered sugar)
  • 1 tsp nutmeg

Blend all of the ingredients together on medium (or in a mixer with the paddle attachment) until thick and fluffy.

Spread onto cookies. The frosting is sweet so taste a bit to decide how thick you want your frosting.
